Fresh Blueberry Simple Syrup

As berries come into season, recipes like this one make it easy to bring a little extra flavor into everyday meals. Whether you’re dressing a salad, mixing up a refreshing drink, or adding something special to a weekend breakfast, this Blueberry Simple Syrup is a versatile staple that highlights the natural sweetness and color of fresh blueberries.

With just a few ingredients and a little time on the stove, it transforms into something that can be used in multiple ways, from a light vinaigrette base to a summer mojito mixer, or drizzled over pancakes for a fruit-forward twist.

Fresh Blueberry Simple Syrup

Makes 1 cup of syrup

Ingredients:

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup fresh blueberries, washed and stems removed
  • 1 tablespoon vanilla extract
  • Juice of ½ fresh lemon

Assembly:

  • In a small saucepan, combine sugar, water, blueberries, vanilla extract, and lemon juice.
  • Bring the mixture to a gentle boil over medium heat, stirring occasionally until the sugar is fully dissolved.
  • Reduce heat and simmer for about 10 minutes, or until the blueberries begin to soften and pop.
  • Remove from heat and use a stick blender to lightly blend the mixture, breaking down the berries.
  • Return the saucepan to low heat and continue to simmer for another 10 minutes, or until the syrup thickens slightly and coats the back of a spoon. (For a thicker syrup, continue simmering a few minutes longer.)
  • Remove from heat and allow to cool slightly. If desired, strain through a fine mesh sieve for a smoother consistency.
  • Transfer to a jar or bottle and store in the refrigerator until ready to use.

Serving Suggestions:

  • Use as a base for a light, fruit-forward salad dressing
  • Stir into your favorite summer cocktail or mocktail, like a mojito, for a fresh berry twist
  • Drizzle over pancakes, waffles, or French toast for a naturally sweet topping
  • Mix into sparkling water or lemonade for an easy, refreshing drink
  • Spoon over yogurt, oatmeal, or granola for a quick breakfast upgrade

Creamy Blueberry Vinaigrette

Makes about ¾ cup

Ingredients:

  • ¼ cup Blueberry Simple Syrup
  • ¼ cup neutral oil (such as avocado or vegetable oil)
  • 1–2 tablespoons apple cider vinegar
  • 2 tablespoons sour cream (or Greek yogurt)
  • Salt and black pepper, to taste

Assembly:

  • Add all ingredients to a mason jar with a tight-fitting lid. Seal and shake well until fully combined and emulsified.
  • Alternatively, whisk together in a bowl until smooth and cohesive.
  • Taste and adjust seasoning as needed. Store in the refrigerator until ready to use.
