Mint Meadow Matcha Cooler

Makes two 10 oz. servings

Ingredients:

  • 10–12 fresh mint leaves, plus extra sprigs for garnish
  • 2 tablespoons raw honey
  • ⅓ cup water, plus ½ cup cold water, divided
  • 4–6 thin lemon wheels, divided
  • 2 teaspoons matcha powder
  • Ice

Assembly:

  • In a small saucepan, combine the mint leaves, honey, and ⅓ cup water. Warm gently over low heat, stirring occasionally, until the honey dissolves and the mint turns fragrant, about 2 minutes.
  • Remove from heat and let the mixture steep for 5 minutes, then strain into a small pitcher, pressing on the mint to release the last of its flavor. Set aside to cool slightly.
  • Drop 2–3 lemon wheels into the bottom of each glass and muddle lightly to release their juice, then fill the glasses with ice.
  • In a separate bowl, whisk the matcha powder with the ½ cup cold water until smooth and lightly frothy.
  • Divide the mint-honey syrup between the glasses, then top each with the whisked matcha.
  • Stir gently to blend, garnish with a mint sprig and lemon wheel, and serve the Mint Meadow Matcha Cooler fresh.

  • Swap the honey for agave or maple syrup for a fully plant-based version.
